I never really hear varnish talked about much, at least outside of being an almost specialist finish for serious woodworkers or commercial usage. It rarely seems to be the first choice for DIYers, but I seriously fail to see why. Compared to polyurethane, it dries significantly faster and results in an similarly durable surface. Additionally, if gloss is desired, the gloss variant of this leaves high-gloss poly in the dust!
