I recently made a cornbread with the Bob's Red Mill Medium Grind Cornmeal. It was delicious! The medium grind cornmeal gives the cornbread a great texture. It is a high quality product. We are never disappointed with the results. I will definitely continue to purchase this product and highly recommend it to you.
I used to buy another brand which starts with the letter "Q". They sold out and the new company produces only a powder like grind! I refuse to buy that any longer. I used your medium grind twice now for the best cornbread I've ever had! Your recipe on the bag worked perfectly!
I love the medium grind cornmeal. I am gluten intolerant so my cornbread is made with only cornmeal. This cornmeal works great for that!! It has a great texture and taste.
I've always been a fan of cornbread, and this cornmeal delivers that well. That said, I had an abundance of Bulgarian buttermilk left over from another project and saw the recipe for cornmeal pancakes on the front of this bag of cornmeal and followed it to a T. It was stand alone delicious and didn't even require syrup! I'll probably never have regular pancakes again at home without asking “are we out of Bob's Red Mill Cornmeal?”
I really like Bob's Red Mill medium grind corn meal. The finished product has a bit of crunch to it making the cornbread much better than a fine ground corn meal. I tried a new recipe that is very popular with my family and friends who have had it. To the recipe on the back of the package, I add a tablespoon of lemon zest. Instead of just buttermilk, I use one third of a cup of Whole Milk Greek Yogurt, mixed with milk to make the one and one third cups of milk to soften the cornmeal. I add one third of a cup of Sunflower oil instead of the amount of melted butter called for. I add a scant half cup of sugar instead of the one quarter cup called for. I make cornbread often to the delight of my family and friends.
As usual delicious and for a non-cook easy to make.

This makes STUPENDOUS cornbread. Just about like what I find (if I am lucky), out in rural Appalachia. ground by an ancient steam-powered machine at some kind of festival. If people don't like its coarse, gritty texture, then they should buy that powdery stuff at the grocery store. I'm so glad to find this cornmeal! And, please yall, don't use sugar with this product--it makes a perfect pone without it!
I love your cornmeal to make cornbread, but my husband thinks it's too gritty. You used to have a fine grind version, but I haven't been able to find it for a couple of years. Now I put it in the food processor and grind it for a while. This helps some, but it's still grittier than my husband would prefer. I'll keep using it, but I sure wish I could get my hands on some fine grind!
