Makes a wonderful muffin bread. I have found using dried fruits in the mix gives better results than fresh fruit, but either way, it's a nice alternative to cereal or toast in the morning. Cooled, sliced, and frozen (using wax paper squares between slices) makes it easy to separate the slices. Very good texture, too!
The muffin and scone mixes are my favorite King Arthur gluten free mixes. Blueberries and walnuts added to the muffin mix make for a delicious treat. I like to add orange oil and zest together with raisins and walnuts to the scone mix. It's almost impossible to find the scone mix in our local stores so I order several at a time.
I have tried other brands, but this one is the BEST! The muffins taste good, hold their shape during backing, rise like real muffins, and they taste very similar to regular muffins that I LOVE, but have chosen not to eat anymore. Great substitute. Makes gluten free easier.
We make gluten free fresh blueberry muffins and chocolate chip muffins, splitting the batter in half. We make mini muffins and regular sized muffins, sometimes using paper liners especially if we are transporting them, or buttering up the muffin tins which produces a more flavorful muffin. Sometimes I have even made the batter into a quick bread loaf following package directions adding fresh blueberries and fresh lemon zest. It makes an awesome loaf!
This is a delicious muffin mix and the best of all the others that I've tried. You can't distinguish it from a muffin that is not gluten-free, as several of my friends have told me. I spread the mix into 18 muffin tins and they rise fine. I also add 1/4 cup of mini chocolate chips -- not much -- for but for me, those chips make it even better.
This is an easy to make mix and tastes very good. Even my hubby that does not have to eat gluten free likes it. I added mixed berries in this time. Next time I will add apple and cinnamon. I would actually make these and frost them as a vanilla cupcake, you can pretty them up by the toppings. It would make delicious berry shortcake also. Will use again!
These are some of the best muffins made from a mix that I have tasted. I can make seeming endless variations. This find was a great gift when I had to go gluten free 10 years ago. My grandkids prefer these to any other muffins! Thank you, King Arthur
The first time I made blueberry muffins with this GF mix I couldn't wait until they came out of the oven and cooled down so I could try them. I was in heaven, they were so good. I raced back to the kitchen to re-read the box to make sure they really were Gluten Free. They are so delicious. Thank you King Arthur... and the GF scones are great also.
I stumbled onto this muffin mix and decided to try it with some blueberries I purchased. Delicious! They were moist and very flavorful. I added some sugar topping for some crunch on the top and loved it. Needless to say, the dozen the mix made were eaten in no time!
This definitely is the best GF plain muffin mix that tastes close to regular muffins. I added a package of blue berries which were delicious. My only complaints are that it's a little too cake-like and takes A LOT of oil/butter. Makes more than 12 muffins.
