Great cooker! My favorite cooks are ribs and pork butt. I have also done a brisket on the grill and everything came out well. It's very user friendly. Once you get the vents set up right, it's on auto pilot.
Simple enough for a beginner in smoking, advanced enough for a pro to fire up and use. You simply monitor the temps and if it gets too hot, you close the dampers. Need more heat? Open the dampers back up. I've yet to have something bad come off my WSM. You'll find yourself making excuses to fire it up and cook whenever there's a call for something tasty.
I now have 3 WSM 22's. I won 1st place for smoked ribs on my 22 and plan to defend that title by cooking on my 22. My wife and I own a BBQ Food Concession Trailer...we use our WSM's to smoke our BBQ. They're efficient and easy to cook on. You should get one...or 2...or 3. That's it. That's my review.
After 35 years of experience with the Weber 18" "Bullet", I'm using my new Smokey Mountain Cooker 22" for the first time today. As useful as are the 18" cookers (I have worn out many of them), it it a real treat to have graduated to the 22". Now there will be lots more room for cooking baby back ribs without being concerned that they will touch the sides of the smoker or be on top of each other. The most important improvement, though is the ability to monitor and control cooking temperature. The thermometer at the top is a big help, but better still is the rubber covered port for inserting thermometers to measure both food and cooking temperatures. Today I'm smoking pork shoulder and stuffed flank steak roulades, and I'm confident I'll know when they're done but not overcooked. Can't wait to taste the food!
My 22” WSM has met all expectations. I've gone 15 hours with a full basket of charcoal briquettes with wood chunks holding temps ranging from 225-275. I've smoked and ribs, pork butt and brisket so far. I'll be trying whole chickens next. I've had many Weber Kettles and offset smokers so I wants to try out the Weber Smokey Mountain and I am not disappointed.
I've used it once so far to smoke a Brisket and it works great! As a newbie I found it easy to control temperatures and love the fact there's a whole bunch of mods available online. The quality is top notch. Very pleased!
I love it. It's a process to use, like other smokers, but you have to enjoy the process. I would buy another or suggest it to anyone.
Easy to use and easy to clean. The stock charcoal door is under engineered but there are aftermarket alternatives that do great.
WSM is a Excellent smoker. 1st time smoked a brisket on the 1st day and it was on point. Heat is consistent but door does not close all the way. Side rubber broke (where the probe goes) after 1st use. I contacted Weber and they are sending a replacement. Quick response and very helpful. Overall I would recommend the WSM. SMOKE ONE!!!
If you are only going to have one smoker, this is the one. It is very versatile and can handle anything you put on it. The only design flaw is that the lid fits INSIDE the body instead of like the Weber Kettle where the lid fits on the outside. This is a problem because if it happens to get rained on, all that water collects in the bottom of the smoker. I really do hope that Weber changes this in future designs. Otherwise, this smoker would get 5 stars. I would also buy a brand new one without even thinking about it.
