Let me start by saying I ordered this smoker as a replacement to my first Masterbuilt 30. I placed my order 3 weeks ago and within 3 days I was back up and smoking away. I like the fact that this MES40 uses wook chunks. They last longer for the smoking time. Less wood is needed to achieve the desired flavor to the meats. Overall I am very satisfied with this smoker. Highly recommend for a beginner or an avid smoker aficionado.
I now have both the 430/s and the 440/s units and without a doubt, either one is capable of making some of the best smoked ribs, tenderloins, and salmon. I particularly favor the St. Louis style ribs. Everyone who has eaten my ribs cooked on the Masterbuilt raves about how good the flavor is. Not to be outdone, the smoke salmon is beyond comparison. We prefer the Scotish wild Salmon cooked to 145 deg internal temp using Cherry wood. Unbelievable results.
I've been able to use the unit once with the rotisserie attachment and it worked as advertised. The Bluetooth feature doesn't want to maintain a connection with my phone, but it's a bonus feature that isn't overly important to us. The assembly was fairly simple, but the broiler and rotisserie attachments required some time and effort to install.
I bought this smoker a month ago, and it's been working well for the most part. Smokes great, easy to clean, but the Bluetooth Feature well not stay connected which sucks because it's one of the main reasons I ordered the smoker. I try to re sync it over and over. Only thing that works is unplugging it then repairing it but that doesn't last long. Other than that, it's a great product.
Smoker works well - but the app does not. I love the ability to set the temp and the smoke separately. The bluetooth connection doesn't travel very far, but I can keep connection within about 20 feet. However, I've learned to only use the app to monitor the temp / time. I cannot recommend to use the app to change the temp. I've had major problems both times I've tried changing the temp using the app. By major I mean I used the app to set the temp to 240, came back about 20 minutes later to find the smoker temp at 350, and unable to make it drop with the app. I disconnected the app, and then the temp finally began to drop back down to 240. I don't blame the smoker - it seemed to work just fine, but I only use the app to monitor temps now, not change them.
Overall very good product. Especially for the price. This is my third one in approximately six or seven years. Holds up pretty well. Had to replace the other two primarily because I left them out in the weather occasionally without covering instead of keeping in my garage. The control panels wore out with the weather. This newer version works very well when I purchased it recently. I cooked 4turkey breasts (two at a time) over the Thanksgiving holiday. I did not smoke them, just injected them, place them in a foil pan, and put them in the smoker and let them rip on 275° for approximately four hours. I would have gone for a lower temperature and more time, but I did not have enough time in the day. They were extremely moist and everyone said they were phenomenal. I have used this same smoker to cook multiple ribs, pork shoulders, and several dozen beef briskets. Beef brisket is best at 225° or less or somewhere between 12 and 16 hours. I usually put them on overnight. The meat falls apart. Use a foil pan brisket. No complaints about the product.
I bought this a few weeks ago, smoked a brisket in it, and kept getting error code and the temp wouldnt stay the same, kept rising to 350 degrees and back to 225, then 600 degrees and back to 225, wouldnt recommend, the bluetooth is terrible, 3 feet away and it disconnects, save your money and get a kamado joe!!
I have had a Masterbuilt smoker for about 15 years and the heating element went out on it a few times in the last 3 years. So I decided to upgrade and get a new one with all of the technology available. I went to put my first brisket in and it is so small (side to side) that I had to cut the brisket in half to get it to fit. Why in the world would you make a smoker so small that a brisket or a rack of ribs would not be able to fit? I understand having different sizes available but come on...that thing is tiny inside! I never post negative reviews but others need to know about this before they purchase it.
Please read the reviews of others. I wished I had listened. ERR2 on second use less than a week old. Taking back to Cabelas. Will try a different brand.
I used my new smoker for the second time last weekend for a 4th of July feast. And my meat was ruined. My smoker stopped operating half way through the cooking process. Needless to say, I was upset and so were my guests. Now when I turn my smoker on, all I get is an "Err2" on my screen. That's it.
