Essential part of my pizza dough.
The Tortellini in Brodo I made using this Semolina Flour was better than any chicken noodle soup I've ever had. So, in our household, it's the new chicken noodle soup I will make anytime any of us gets sick, or if we just want an excellent dinner! I found the dough easy to work with and hand kneaded then hand rolled it out. Perfect, thanks!

I've been a home bread baker for about 6 years and have used Bob's Red Mill products from the supermarket for a long time. When the quarantine hit I started noticing that I couldn't find any flour left anywhere- even online. Bob's Red Mill had a 25 lb. bag of semolina flour available. I've always bought 5 lb. bags of different flours from the supermarket- never 25 lbs. After I figured out how I could store it, I pulled the trigger. Necessity is truly the mother of invention and over the past two weeks I've expanded my repertoire to include both sourdough semolina breads like those from Altamura Italy and revisited my attempts at pasta making from a few years ago. It quickly became everyone's favorite bread ("yellow bread" !) and we've been making fresh pasta night after night, learning how to roll and extrude and hand-shape a bunch of different types. I'm now using more semolina flour than I do bread flour ! Thanks Bob's Red Mill !
Every Christmas, I make an Italian Anise cookie from a recipe by Lidia Bastianich. It calls for No. 1 Durum Wheat Semolina Flour. Lidia has hosted numerous cooking shows on Public Television and the Food Network. She has also received many prestigious awards for her Italian cooking and restaurants, including “Best Outstanding Chef” by the James Beard Foundation. The greatest compliment I received was from my 90-year-old Italian friend who says the Anise cookies taste just like her mother's did.
Love your products, I just purchased a 25 lb bag of semolina flour felt bad for leaving the shelves at the corner store empty by buying multiple 1lb bags. I used this in a bread recipe given to me by a friend. It tasted like what you get in an Italian restaurant.
I have never made pasta, but, plan, too some day. I use this flour for pizza crust, baguette bread, sub rolls and more. It works great and tastes great, too!! I recommend it 100%!
