I bought one of the smaller sets years ago I think it was 07 or 08 and loved them so much we have since purchased all of the additional knives, poultry shears and scissors. We even bought 12 steak knives. I just wish we could buy the large knife block alone. We take care of them and they work great. We have only had them sharpened once but we do use the steel to keep the edge.
I have finally found out how nice it is to own a quality knive. I believe this set will last forever with proper care. The review I read about "pitting" is a mystery. I own this set an several other Calphalon knive, and never, ever put them in the dishwasher. Did the person leaving the poor review read the instructions? Anyways, Calphalon I am sure will stick behind their products.
I bought my set of Calphalon Katana Chefs knives in 2005, mostly because I could not afford the more expensive Japanese VG Steel knives on the market. After 10 years of daily use they are all like new, and sharper than ever. The sets come with a Diamond Impregnated Steel. This is needed as the Katana knives have a Rockwell Hardness rating of 59-60; harder than 99% of the standard Steels on the market. This blade hardness is what make the Katanas the best buy in Professional Chefs knives on the market! Like any other great knife design; these must be hand washed (no dishwasher), dried right away, and steeled often. If you are not committed to a lifetime of proper care; then don't buy these or any other brand in the Professional Chefs class.
My wife and I received the smaller knife version of this knife and we were pretty happy with the design, feel, and quality that we decided to go with the larger set. If handled well, these knives can last a good amount of time. They might not be THE professional grade knife set, but they are still better than you basic $100 or less set. Concerning price...it is a bit on the pricey side. If it wasn't a Christmas gift, I am not sure if it would have been purchased.
The absolute best knives I have ever owned. I have a set of Henkels and Cutco knives that were more expensive. These knives are sharper and stay shaprer much longer. They have a nice balance and weight .. Tney feel great in your hand when using them. Have to take care of them though wash and dry immediately after use or you will get pitting apparently but if you love your knives you will care for them properly.
It has historically been associated with the samurai of feudal Japan, and has become renowned for its sharpness and cutting ability. In the right hands, these instruments cut with exacting precision in the right hands! My wife never understood my reasoning for investing in "expensive" knives and once she had the santoku in her hands, it was like she discovered electricity!! Right out of the box she said, "these knives are sharp enough to cut into the future!". After a brief explanation on the care of the knives we have never looked back to our old set. The knives are weighted elegantly and fit the hand as if made just for you. As with any knife of this caliber, if you respect it, it will continue to serve you for years!!!
I chose this set because of Calphalon Quality and support. These Katana knives are very sharp, have a good weight and this set had all the knives I really wanted. There is nothing flimsy about any of these knives. They have made cooking much easier. The Nakiri ROCKS! It slices through a large onion like butter. The steak knives are interesting as the front half of blade has ridges but just on one side while the back half of the blade has no ridges. They all work very well. The block is a gorgeous mix of different medium and light tones but I think it is veneers. They are not dishwasher safe so I have to be careful hand washing not to cut myself. So far, I am very pleased with this set.
My husband and I registered for these knives as part of our wedding registry. We choose these in part for their design, since they match his wedding band, but we also knew that being Damascus steel they would last a long time as long as we took care of them. I have never had quality steel of any type rust, and as for the "pitting" in an earlier comment, the manufacture does say to hand wash and dry immediately to prevent discoloration and water spots.
We received this set as a wedding present and use these knives on a daily basis. I have had them for over 3 years. I take care of them by always handwashing with non-citrus soaps. I also keep them sharp and honed. I am very happy with them and none of them are showing any signs of wear. I also really like the bamboo look of the storage block.
Recently replace an earlier set of Calphalon knives, they were fine but, missing one steak knife. So, I gave the set to an appreciative family and got the Katana set. Wow, are they ever neat looking. Talk about sharp, be careful when you wash and dry them before using. The 18 piece set is all I will ever need, everything is included, he honing steel is impregnated with industrial diamonds and takes only two swipes per side of the blade and you've got a super sharp knife. Follow the instructions and wash and dry immediately to prevent the blades from spotting. It will also lead to dulling and pitting if not dried as soon as they're washed.
