Anyone who has had tried my Dad's pumpkin pie will agree that his are the best that they've had and Libby's Easy Pumpkin Pie Mix is exactly what he uses for every one.
I made this super easy pumpkin pie and it turned out great with my homemade all-butter pie crust! The seasonings and texture of the pie made for a really delicious Thanksgiving treat.
No one makes pumpkin pie mix like Libby. They are the real stuff. I love to make pumpkin bread around the holidays and this is the only brand that I will use. If you're interested here is the recipe that I use Servings: Makes 2 loaves Prep Time: 20 Minutes Cook Time: 65 Minutes Total Time: 1 Hour 30 Minutes INGREDIENTS 2 cups all-purpose flour, spooned into measuring cup and leveled-off 1/2 teaspoon salt 1 teaspoon baking soda 1/2 teaspoon baking powder 1 teaspoon ground cloves 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg 1-1/2 sticks (3/4 cup) unsalted butter, softened 2 cups sugar 2 large eggs 1 15-oz can 100% pure pumpkin INSTRUCTIONS Preheat the oven to 325°F and set an oven rack in the middle position. Grease two 8 x 4-inch loaf pans with butter and dust with flour (alternatively, use a baking spray with flour in it, such as Pam with Flour or Baker's Joy). In a medium bowl, combine the flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg. Whisk until well combined; set aside. In a large bowl of an electric mixer, beat the butter and sugar on medium speed until just blended. Add the eggs one at a time, beating well after each addition. Continue beating until very light and fluffy, a few minutes. Beat in the pumpkin. Add the flour mixture and mix on low speed until combined. Turn the batter into the prepared pans, dividing evenly, and bake for 65 75 minutes, or until a cake tester inserted into the center comes out clean. Let the loaves cool in the pans for about 10 minutes, then turn out onto a wire rack to cool completely.
This is such a great price for two cans, I stocked up! I donât understand why people are having such trouble with this. It takes 5 oz of evaporated milk and 2 eggs, thats it. So easy and taste so good! I only buy this kind of mix ever now.
I bought this then read the reviews and thought Oh no it's not going to set. There was a lot of filling so I did not use all of it. I had two cans like I said before I didn't use all the filling on the second pie. I followed the directions both pies turned out fine. Everyone's oven cooks different. When I cook pies in my oven they always have to stay in longer so it did take longer than recommend. The taste was fine to me and no complaints from family members. The pie was not a very spiced up pie mix if you like a heavier spiced pie you will want to add more to the mix. I gave this 4 stars the pies turned out great and no issues.
I bought two cans of the pumpkin mix. I looked on the can and it showed just add two eggs and a can of sweetened condensed milk. I got it home and the recipe said to use evaporated milk. So what am I suppose to use?
I should have known the pie wouldn't set because the filling did not flow out if the can. It was like a glutinous gel. It never set and I've baked a lot of pies.. I'll just use the pumpkin that you use with evaporated milk next time... Thanksgiving is ruined.

Not happy with the added sugar in label but not sure what amount was added to the 30 Oz can. I hate it when a product isn't clear about it on a product. Better information needs to be on the product.
