Excellent low sodium jambalaya.
Love this quick & easy meal. I use smoked sausage for a go-to tasty supper
Buy any type of sausage you want. Add some shrimp, chicken whatever meat you want, I put in a can of diced tomatoes & I substitute the water for broth. I also use a large skillet w/cover. This box makes more than enough for two people.
Love the version with lower sodium. My 81 year old Father loves jambalaya and this is so easy for him to make for himself. I get the Sam's Choice Cajun Andouille sausage that comes with four links in the package (12 ounces). He cuts into bite size pieces and adds to pot with either vegetable stock or water. Within 20 to 25 minutes he has a quick meal and leftovers for two more meals to freeze for another day. He has substituted diced chicken or at the last five minutes tossed in frozen shrimp. Another reason he likes it besides the convenience is that it gives him a sense of being independent. We always have a variety of frozen meals available and it's amazing that the rice and meat come out perfectly after being frozen.
