I use the yellow rice for a quick week night dinner. Throw some chicken breast in the crockpot, chopped onion on top with however much cream of chicken soup I want. Cook on high 3-4 hours or low 7ish hours. Once done mix in your prepared yellow rice, a can of drained southwest corn and some cheddar or taco cheese. Never any leftovers.
